Halayang Ube Ingredients:
1 kilo ube yam root
1 can (14 ounces) evaporated milk
2 cans (12 ounces) condensed milk
1/2 cup margarine or butter
1/2 teaspoon of vanilla (optional)
Halayang Ube Cooking Instructions:
On a cooking pot, boil the ube that is unpeeled in water and simmer for 30 minutes.Drain and allow cool.
Peel and finely grate the ube yam.
Heat a wok that is big medium heat.
Melt butter or margarine, add the condensed vanilla and milk flavoring. Mixwell.
Filipino recipe that is style Kalamay ube is another Filipino dessert and meryenda(mid-afternoon snack) that is commonly offered over the roads. Kalamay ube is just a chewy rice cake that is purple of purple yum(ube). Purple yum comes boiled, peeled and grated then cook with coconut milk, rice sugar and flour until dense. Sprinkle with coconut curd(latik) then provide hot.

Combine the juice of just one can (langka in syrup) and 1 ¾ cups water in a pot. Add 2 cups of sugar. Chop the langka and include it towards the pot. Bring to boil and continue steadily to cook for 20 to 25 minutes or before the langka are soft. Cool off before serving aided by the kalamay.
To serve – brush kalamay with coconut curd oil then slice kalamay into pieces. Place in a bowl and drizzle jackfruit syrup on the top and around the kalamay pieces you can add chopped langka. Top with an increase of coconut curd. Enjoy.
1 pack, 16 oz grated ube
1 2/3 cups sweet rice flour
1 can coconut milk
1 3/4 cups sugar that is white
1 tsp vanilla (optional)
1/2 tsp food color
1 tbsp coconut oil (through the latik)
For the LATIK:
2 cans of coconut milk or 1 can for the brand that I use (see photo below)
Recipe yields 2 cake pans
You can add 1/4 cup more sugar it sweeter if you prefer.
